Local Treasures at Swiss Cafe, Arion Swiss-Belhotel Kemang

As an international hotel chain in Kemang, this hotel probably has the reputation of catering to western palate. Rightly so, especially their buffet selection that is popular among the staying guests. Located on the ground floor, Swiss-Café Restaurant serves a selection of Asian and Western favourites.

But as it turns out, Swiss Café stores a truly authentic Indonesian menu in their sleeves; From the kitchen of Chef Eko Widianto, Swiss-Belhotel’s own Executive Chef, came some very authentic Indonesian cuisine; ones that will surely make your mouth water instantly.

For the first dish, we tried the Bebek Goreng Bali or Balinese Crispy Duck that is crispy on the outside yet incredibly off-the-bone tender inside as it has gone through not only two, but three different cooking stages. First, Chef Eko puts the duck over fire, to rid off the impurities and to crisp the skin. Then he slow cooks it in a concoction of herbs and spices for over 4 hours until it’s tender, and lastly, deep fries it to get that extra crunch and intense flavour. Perfectly served with a spicy sambal, lalap or fresh vegetables, and hot fluffy rice.

If you want something less fiery, Chef Eko also serves us his Sop Buntut or Oxtail Soup, with clear yet very flavourful broth, coming from yet another slow cooking of the oxtail, in a mix of herbs and spices including white cardamom, cloves, nutmeg, and star anise. Served with rice and emping (crackers made of melinjo) this is truly an Indonesian staple food any Indonesians cannot say no to.
