The Ultimate ‘Good France’ Experience with AMUZ

Following the success of last year’s Goût de France or ‘Good France’, this worldwide gastronomy event is held again this year starting on 21 March 2016, with a view to making it an annual spring event. Organized on the initiative of Alain Ducasse and the French ministry of Foreign affairs Goût de France showcases the French way of life, regional products, and France as a tourist destination.

In Indonesia, 22 restaurants across the country has participated and showcased this parade of France’s culinary traditions, among them 11 in Jakarta. Each recipe will be based on cuisine that uses less fat, sugar and salt and shows concern for “good food” and the environment.

For this year’s Gout de France, the country’s cultural representative in Indonesia, Institut Français d’Indonésie recently invited me to a dégustation in Amuz, one of the 22 participating fine dining French restaurant, with Chef Gilles Marx at the helm. Chef Gilles, who has over than 20 years of experience in French cuisine  and who has gained international recognition and award, has created a 6 course menu that he feels best represent the spirit of the ‘Good France’.

Before escorted to the dining area and while waiting for the other guests, we were served with Chef Gilles’ signature aperitif, the simple and comforting freshly baked gougères, choux pastry mixed with cheese.  After being seated, the spirit of the ‘good french’ escalates  as we were presented with the customary basket of freshly baked breads to be enjoyed with what is said as the best butter in the world, Beurre d’Echire.

For the first course, the cold starter, a twist of the french classic terrine is served. Instead of the usually heavy meat rendition of terrine, chef gilles creates his using brittany artichoke, resulting in a mild and sweet taste to contrast with the crisp of the flemish tart and the drizzle of truffle vinaigrette.

For the second course, a roasted barramundi fillet was served on a bed of smooth green pea purée, roasted asparagus, tomatoes, and asparagus, and a drizzle of emulsion made from l’ail nouveau or young garlic freshly dug out the ground, making it subtler and more vibrant in flavor.

For the main course, chef Gilles’ own rendition of boeuf wellington was the choice; wagyu beef sirloin, a thin layer of spinach and duxelles are sandwiched between incredibly crisp savory puff pastries, served with few drops of truffled red wine sauce.

And what is a French dinner without a dish dedicated to cheese? for the fourth course, chef Gilles gave the spotlight to hazelnut-crusted fresh goat cheese that is delicate in taste and almost buttery in texture, served on a sweet and juicy heirloom tomatoes with simple olive oil and dots of balsamic glaze dressing.

As if knowing that dessert is many people’s favourite of the meal (if not the day!), chef Gilles breaks down desserts time into two parts; the pre-dessert is the simple yet refreshing Thai coconut jelly and sweet pomegranate ‘pearls’, the only non-french influence of the night, while the main dessert is the AMUZ Red Velvet Delice, with red velvet cake chunks tumbled on top of a strawberry cream cheese ice cream, hibiscus jelly and caramel tuille.

Going through all the dishes was a truly remarkable experience an definitely one of the finest way to really experience France away from France. Incorporating rigorous french cooking techniques with top quality ingredients, it doesn’t get any more fine french food than this. While the schedule varies for each participating restaurants, Amuz’s special Goût de France menu is available in a short period until 3rd of April, 2016 (a week longer than planned), but you can of course enjoy an equally sense-stimulating multi-course dining.

Premium dining outlet OKU will offer a unique culinary journey Jakarta, 28 March 2016-Indonesia’s vibrant dining scene is about to be transformed with the addition of the city’s premier premium Japanese dining venue, OKU. Opening on 1 April, OKU will be a unique eatery helmed by Chef Kazumasa Yazawa (better known as Chef Kaz), who counts renowned Japanese Chef Tetsuya Wakuda among his heroes and mentors. Chef Kaz’s plans for OKU are to present a modern take on Japanese dishes with traditional flair, and to make the restaurant the perfect combination of both business and leisure dining destination. To this end, he brings to the restaurant a unique philosophy that reflects his lengthy experience as well as his personal beliefs.

“My cooking philosophy is simple: all of my creations are made with absolute respect towards all the products and ingredients that are used,” says the chef who is also a competent pilot. “In Japanese culture, we believe that we take the spirits and souls from the ingredients’ origins and use them to replenish ourselves, so we are giving honour and gratitude to the organisms that originally housed those spirits.”

Spiritual matters aside, Chef Kaz also adds that his core duty is to bring out the subtle flavours of the food that he and his team cooks—the flavour of the experience, the journey and the environment of the origin of each product and ingredient. “Cooking should not be a random mix of tastes,” he says, “it should reveal the ‘life story’ of what you eat.”

Chef Kaz comes to OKU with a wealth of experience and an excellent pedigree. He was Executive Chef at the Japanese restaurant Izy Dining Restaurant & Bar in Singapore, which he opened in 2013. The restaurant was named among the top 10 restaurants in Singapore by the UK’s Guardian newspaper. Prior to that, he oversaw the award-winning Waku Ghin Restaurant at the Marina Bay Sands.

9 Must Visit Museums in Jakarta

Exploring museums in a city, is a great way to learn and appreciate a nation’s wealth of history and culture. In Jakarta, some museums are better preserved than the others, but we still encourage you to visit these museums for a relaxing walk and a enriching experience:

1. Fatahillah Museum

Also known as Jakarta History Museum (Museum Sejarah Jakarta). the building was a city hall during Dutch Colonial Era. Step inside the museum to check out some historical items or admire the architecture, standing by its large window will get you a pictures idea of what it’s like back then.

Located in the Old Town (known as Kota) of Jakarta, Indonesia. The building was built in 1710 as the Stadhuis (city hall) of Batavia. Jakarta History Museum, opened in 1974, displays objects from the prehistory period of the city region, the founding of Jayakarta in 1527, and through the Dutch colonization period from the 16th century until Indonesia’s Independence in 1948. The museum is located in south side of Fatahillah Square (former Batavia city square) near Wayang Museum and Fine Art and Ceramic Museum.

The collection includes objects from the Dutch East Indies Company, historic maps, paintings, ceramics, furnitures, and archeological objects from the prehistoric era such as ancient inscriptions and sword. Here also contains the richest collection of Betawi style furnitures from the 17th to the 19th century.

2. Museum Bank Mandiri

This property is easy to spot, just opposite the Jakarta Kota busway station and Jakarta Kota Train Station. It showcases collection of Bank Mandiri; a prominent government-bank which is the result of merger of several banks back from Asian economic crisis. The collection including bank layout with several original furniture, banking appliances, and other bank-related item.

3. Museum Bank Indonesia

The museum is just north of Museum Bank Mandiri. Sporting almost identical layout as the former, this museum showcases the journey of Indonesia’s national bank (and the only bank to regulate money circulation in Indonesia) from the back days up to now. Officially opened in July 2009, this museum also offer some interactive zone as well as a theater showing short documentary.

The museum presents information of Bank Indonesia’s role in the nation’s history that began before the arrival of the west of the archipelago until the formation of Bank Indonesia in 1953 and Bank Indonesia’s policies, including also the background and impact of Bank Indonesia’s policy for the community until 2005. The presentation is packaged in such a way to take advantage of modern technology and multi-media, such as electronic displays, static panels, plasma televisions, and so creating a diorama of visitors to enjoy the comfort of Bank Indonesia Museum. There are also facts and collection of historical objects in the period before the establishment of Bank Indonesia, as at the time of the kingdoms of the archipelago, which include money numismatic collection also attractively displayed.

4. National Monument (MONAS)

A symbol of Jakarta, the tower also acts as a museum. It’s divided into 3 main parts; the top is an observation tower; the mezzanine has a large podium overlooking all over Monas Square. Inside, there is a replica of National flag and a room where one can listen to the proclamation text being spoken by Indonesia’s first president, Soekarno. In the basement, there are 30s dioramas depicting Indonesia’s history.

A lift on the southern side carries visitors to the viewing platform at a height of 115 metres above ground level. The capacity of the elevator is about 11 people. The top platform can accommodate about 50 people. There is also a staircase for use in emergencies. The total height of the monument is 132 metres. The distance from the viewing platform to the tip of the flame is 17 metres.

Mamma Rosy: Real Food from The Hands of an Italian ‘Mamma’

There’s something about the world of Italian cooking that truly captivates me; The anecdote goes something like, ask any Italian anywhere their opinion about food, the response will always be something like ‘my mother makes it better’. This probably rings true for any home cooking, but for me, it tells a lot something about the culture of food in Italy.

Like any big capital cities in the world, it’s definitely not hard to find a good Italian food in Jakarta. From the localized version ‘warung-style’ restaurants, to fancy haute cuisine Italian restaurants that are up to par with world’s finest. But have you ever had, a true home-cooked mamma style Italian cooking? The kind of cooking that makes the aforementioned Italians just can’t bear to look the other way? Hearty meals that are cooked with a whole of lot of heart using recipes that hav been passed from generations to another.

The story of Mamma Rosy started with Daniel Vigone, an Italian that has been living in Jakarta for over 10 years. Daniel, whose family has been in the restaurant business since after the World War II, has always dreamed about introducing his grandmother’s and mother’s authentic Ligure cooking to the city.

Until one day in 2013, when Daniel found a big house in Kemang Raya that he saw fit to be turned into the restaurant of his dream. Before long, the whole Vigone family emigrated to Indonesia to dedicate their lives for the restaurant; especially mamma Rosy who became the icon of the restaurant and who now you can always see busying herself in the kitchen, making everything from the handmade Pasta, the sauces, the decadent (and live-changing, at least for me) Tiramisu.

Having been re-purposed from a large house with segregated spaces, Mamma Rosy provides its guests completely different dining areas to choose from. Stepping in from the entrance, there is the semi-outdoor terrace seating area, the air-conditioned room by the kitchen which walls are adorned with floor to ceiling images of the family’s picturesque seaside home-town–like a constant reminder of where the food your eating is rooted from–another door leads to some more private rooms, and stairs lead to my favourite, the rooftop seating areas where the bar, the wood fire oven and grill station are located.

“Our food is actually very simple,” Stefania Vigone, one of Rosy’s daughter explains, “Liguria is where the mountain meets the sea, so our food is a mix of seafood and ‘mountain’ food. We have a lot of dishes which is very specific to our region, but we also have the general Italian favourites like pasta carbonara, arrabbiata, etc. so it’s a mixture of all that. But everything in the menu is our family’s recipe.” Stefani added.

One of those that’s specific to the region is the Vitello Tonnato, a typical food of the northwestern Italy that consists of finely sliced roast beef tenderloin with smooth tuna puree and dotted with capers. An interesting combination that rings true to the Ligurian ‘mountain & sea combination’ philosophy, perfect to be enjoyed with Mamma Rosy’s amazing focaccia bread (best I’ve had!).

My degustation continues with the Ravioli con Aioli, fried handmade spinach and beef ravioli with aioli. To me, the aioli steals the show here. Usually never a fan of thick & creamy condiments, I find this emulsified olive oil authentically light and pleasant.

When in an Italian restaurant, you can’t skip the world’s most popular flatbread, the pizza. I opted for the wood fire oven baked ‘Karnivora’ Pizza, with smoked beef, garlic ground beef, and paprika. The toppings are as simple as I wanted it to be, and the bread perfectly chewy with the perfect thickness. Molto bene!

Next comes the other true test of great Italian cooking, the home made pasta. Stefani picked for me another signature, the truffle tagliolini, or freshly handmade tagliolini (a type of pasta shape that is traditional to Liguria) with leek, parmigiano regiono cheese, and truffle-infused oil. Let’s just say that I Mamma Rosy’s incredibly al dente pasta has changed my perception of the  real home made pasta.

I also tried their delicate yet flavourful filetto alla Ligure; oven-cooked dori fillet with white wine, capers, tomatoes, and black olives. Another one of the many Ligurean specialty you can find in the restaurant. And last but not least, who could say no to a rustic and perfectly made Tiramisu.

There’s nothing better way to really understand one’s cooking, than to understand the cook’s roots and, if possible, her history. Not too often have I had the chance to get to know a restaurant as I have been given the chance to get to know Mamma Rosy–both the restaurant and the family behinds it.

For anyone that loves food and loves learning about food and the culture behind it, a place like Mamma Rosy is a perfect example of where to start. Where else in Jakarta, or anywhere really, you can eat great food where the person whose name is patented as the name of the restaurant, still cooks in the kitchen and will gladly hug you when you greeted her!

Sari Pan Pacific Jakarta Supported Earth Hour 2016

Jakarta 21 March 2016 – As a yearly international activity from World Wide Foundation (WWF), Earth Hour regularly held on the last Saturday of March to encourage individuals, communities, households and businesses in all over the world to turn off their non-essential lights for one hour from 8:30pm until 9:30pm. This represents the symbol of our commitment to protect the planet.

Started at 8:00pm at Lobby area, CARE Champion from Sari Pan Pacific Jakarta held the Earth Hour campaign. CARE Team invited the entire guest to come and let them enjoying the light bites and free flow drink at Lobby Lounge.

The event began at 8:30pm where all the lights were switched off. The guests were encouraged to light up “60+” candles, the symbol of Earth Hour. After that, they can enjoy the performance from dancer. The dancer team was wearing the LED costume that gave the impactful lights at the entire lobby area. The acoustic band also light up the ambience with their Latin songs.

Metro German Restaurant: A Haven For The Pork Lovin’

Good news for the pork fanatics, we have another watering hole we can call home. Although technically not in Jakarta, we feel some kind of obligation to share the world this latest finding in the carnivore world.

Being a Muslim-majority city, it can be a tricky to find a decent pork restaurant in Jakarta, especially that of German style cooking. There’s literally a handful of them and for its exclusivity, comes the high price too. Then comes Metro, a laid back bar/restaurant in BSD area that for the last year, has been attracting visitors not only from its close vicinities but also from all over Jakarta. It serves great food that in a similar place elsewhere, would cost at least twice as much.

On its first floor, you will find the dining areas, suitable for most dining settings, and on the second floor, you will find not only a bar, but also pool tables, dart boards, and a stage for live music performance, and a 60″ screen TV, perfect for those lively sports-watching/drinking nights.

Although Metro also serves a wide range of favourite western food like burgers, sandwiches, and pizzas, bearing the title ‘german’ restaurant naturally means some of the must tries in this restaurants are its pork dishes. Such as their bacon-wrapped tenderloin that is crispy on the inside and incredibly tender inside, served with either french fries, baked/gratin/mashed potatoes, seasonal vegetables and german apple cream sauce (pictured below).
