Last week we were invited by our good friends at The Ritz-Carlton Jakarta Mega Kuningan to try out their “Californian Wine Dinner” in their esteemed restaurant Lobo, which coincides with the Independence Day of The United States of America on the Fourth of July.
Preceded with good three glasses of Sangria, we were ready and quite famished to try out the four courses that Lobo’s new Germany Executive-Chef, Jan Schwittalla, has to offer. We were downright curious as the selections of the courses through the four sensory pleasures that we are going to experience, as most wine-pairing dinner goes on for five or seven courses.
The Chef and his fellow Ritz-Carlton Chefs presented to us an all-inclusive 4-course signature divine set menu with wines such as Egg Onsen a slow cooked egg with porcini mushroom combined with truffle, duxelles mushroom, potato crisp and with velouté sauce paired with Earth Oregon Pinot Noir 2013 (red wine) as starter, Black Crab Bisque a fusion modern European soup with black crab combined with fresh authentic ingredients such as curry, cashew nuts, ginger and lemongrass paired with Migration Russian River Chardonnay 2013 (white wine), Beef Cheek cooked with a slow cooking method using sous-vide technique combined with beef ragout and onion also with bone marrow foam paired with Columbia Crest Merlot 2013 (red wine) and closed with flavorsome dessert Chocolate Mousse layered with dark chocolate including chocolate mousse, biscuits as filling and freshen up with strawberry coulis sauce and harmonized with Decoy Zindafel 2014 (red dessert wine).
Once we got a read-through what’s on offer, we were jittering with excitement because we know that good Californian wines are great companion to perfect selections of anything that excite the senses, and we’re not talking only about meat or fish here. The selections of menu that was paired was truly exceptional as each menu complement s our taste bud. The delicate Black Crab Bisque melted beautifully with the Russian River Chardonnay, The Egg Onsen sets us on a more curious note as the warm tinge of truffle sauce and mushrooms perfectly balanced with the Earth Oregon Pinot Noir, The Beef Cheek that was perfectly juicy cooked in sous-vide style to match the striking note of the Columbia Crest Merlot and to finish the palate we were treated to the warm sensation of chocolate mousse with biscuits and strawberry coulis that cleanses the evening with a perfect Zinfandel.
Rooted as one of Jakarta’s most prestigious address for quality food, Lobo Restaurants have once again proven its persistence in delivering only the best culinary experience to its punters. We look more of the chefs extremely well pairing-dinner in the future!
