The South American cuisine is known for its vibrancy, variety, and uniqueness; exactly what Chef Chris Encina from “Pica” Ubud has prepared. From a combination between contemporary ideas and his Grandmother influences, born a luxury 6-course dinner paired with Chilean and Argentinian wines at Pacific Restaurant & Longue, The Ritz-Carlton Jakarta.
To start the journey, guest will be presented with ceviche, a fresh bite of white fish lime, chili, coriander, red onion marinade, and leche de tigre. You will be tempted by the distinguish aroma from the red onion from this dish.
Next is seared octopus with quinoa, greens, and roasted red pepper pure. Followed by causa de camarones, a beautiful merger of flavors and texture between prawns, marinated mayonnaise, cold potato cake, olive emulsion, and radish fennel creola.
Fish & clams cau cau ends the seafood feast. Guest will be able to enjoy crunchy bites of perfectly cooked fish and asparagus, dressed with yellow chili clams spicy sauce. The Chile born chef elaborately make use of seafood produces as they are easy to get in the island of Bali, the place he called home since 2012.
Last in the dinner menu is beef cheek seco & cassava, a playful combination between slow braised beef cheeks, dark beer coriander sauce, and savory cassava crisp.
To complete the experience, guest will be pampered with either two types of desserts, tres leches, a Peruvian grandmother cake, or picarones, a Peruvian sweet potato pumpkin doughnut.
