This Wednesday, 24 August 2016, Gran Melia Hotel Jakarta will host its first dinner of TheRed Level Gastronomical Series. For one night only, chef Mandif Warokka (pictured above), Chef-owner of the acclaimed Teatro Gastroteque, and BLANCO par Mandif in Bali, will take over the limelight and show off his honed skills and knowledge, as he takes the diners to explore a different side of Indonesian cuisine.
Guests will have their taste buds tantalized by a high-calibre degustation menu prepared by the celebrity chef, accompanied by fine wines to complement the unique spread of well thought of menu.
To a group of media last Monday, Mandif a native Manado with most of his professional career spent abroad, shared his story and love of his Mother’s cooking and his new found love of Indonesian ingredients.
“In Blanco par Mandif, we try our best to incorporate at least 90% local ingredients, and that’s something we want to recreate this Thursday,” he said.
Not only opting on local ingredients for his fine dining menu, Mandif also wants to elevate Indonesian flavors and textures, and make the ingredients the star of the dish.
Like one of his appetizers, a simple ‘acar’ of peeled baby tomatoes, in reduced coconut water and topped with crab meat and edible flowers.
He will also serve one of his signatures dishes, the simple yet incredibly tender sous vide Balinese duck, subtly marinated in ‘basa gede’ seasoning mix and served with foie gras (one of the few ingredients he yet needs to import), sweet potato puree, and soursop sauce.
Chef Mandif doesn’t want to leave out the underrated desserts of Indonesia, with the Manadonese ‘sambiki’ or sweet pumpkin cake served with meringue and caramelized pumpkin seeds.
In his journey as a chef, Mandif was also regularly invited as guest chef for several finest restaurant like Eisvogel – a Michelin Star restaurant at Bierkenhof Hotel Germany, La Salle Restaurant – at ScholsElmau Resort Germany, also in several reality TV shows such as The Grand Final Indonesia Master Chef, The Grand Final Top Chef and The Grand Final Hell’s Kitchen.
Limited to 25 guests, the dinner will start at 7 PM with cocktails, fine wines and canapés. The dishes will be served in an elegant long dining table at the center of the Red Level Lounge, where guests can enjoy the dinner and the Jakarta’s city view on the same time.
