But from 14 August to 18 August 2017, culinary adventurers are invited to celebrate a culinary journey back to the olden time. Entitled ‘Merdeka Moments’, Chef de Cuisine Jan Schwittalla will present for the first time ever a special 5 course set menu inspired by various local dishes that he had come across since he arrived with his modern European style twist.
You will be presented with gado-gado (blanched vegetable with sweet peanut sauce) like never before, served with onsen tamago (half boiled egg); Gulai Ayam (chicken cooked in curry);
Pepes Ikan (steamed fish wrapped in banana leaves); and sous vide Rendang draped with an Indonesian flag, made of coconut jelly. For desserts, Chef Jan has prepared a beautifully presented ‘deconstructed’ Es Cendol that you’ll have to try yourself to believe.
