With Chef Sayuzi’s arrival to the hotel, he intends to showcase years of his experience to the hotel’s menu. “I like to keep things authentic. If it’s supposed to be spicy, then I make it spicy. I think that’s what the guests want.” The chef explains.
One that he’s quite proud of is his new Nasi Campur Arion, a full display of one of Indonesian’s favorite rice platter. Nasi campur or mixed rice, refers to a dish where white rice is served with several different kinds of pre-cooked proteins and vegetables, to make up a whole meal. It can be both a feast, or a staple layman’s meal.
Chef Sayuzi’s version is quite generous and nutrition-packed. Fragrant coconut rice or nasi uduk is served with empal, sweet and spicy fried beef, made with beef tenderloin, grilled boneless chicken thigh, fried tempe and tofu, stir fried green beans, nasi uduk, served with sambal and fresh vegetable. A full commitment! This dish will definitely give a good picture of Indonesian food as a whole.
From his western food repertoire, Chef Sayuzi showcased a simple but much-loved menu of pan-seared salmon, served with mashed potatoes, sautéed carrots and green beans with honey, topped with bearnaise sauce. It is a simple and healthy meal that makes a totally guilt-free indulging.
