VIEW was previously known as a tapas and light meal restaurant that pairs with the K-22 Bar located on 22nd floor of Fairmont Hotel. Recently, the restaurant completely revamped its menu with a fresh take on modern European cuisine with Asian influences that combines the best of locally sourced ingredients, cutting edge cooking technique and state-of-the-art presentation courtesy of the restaurant’s Chef Andrew Zarzosa.
The a la carte menu is divided into Partial View (appetizers), Full View (main course), and Sweet View (desserts). You can also let the Chef surprise you with the ‘Chef’s Point Of View’ that presents a set of chef’s degustation tasting set menu, available in 5-course and 7-course choices, with wine pairing package available.
For starters, you will be served with VIEW signature Amuse-bouches, Gift from the Sea (tuna tartar wrapped in dried watermelon and topped with avocado, served on a hand-shaped plate), Foie Gras Rempeyek and Oxtail Potato Cylinder. (below)
For appetizers, we tried the refreshing Torch Ginger Cured Amber Jack (served with young coconut and avocado purée), Iberian Pork Belly (with miso caramel, shiso and snow pea), and my favourite, the Vegetable Various Ways that serves ever-changing composition of local and seasonal vegetables, which will make even the most picky craving for more veggies.
For main course, the must try is the Beef Short Ribs with Indonesian touch (served with heritage rice, kafir lime foam, kecap manis, and garden flowers with element of dabu-dabu ingredients).
Poultry aficionados could choose from Free Range Chicken (with truffle, foie gras and kailan), or the Juniper Lacquered Duck (with almond potato, watercress and heirloom carrots).
To end the culinary journey with a sweet note, guests could delight in the Sweet View dessert options like Stone Roses (serving vanilla crémeux, rose and lychee) and coffee lovers could enjoy the Iced Coffee (that serves a single origin coffee ice cream with caramel popcorn, Tabanan Bali 38% chocolate, earl grey soup, banana and hazelnut.
Meanwhile, chocolate fanatics could indulge in the options of After 8 (mint ice, dehydrated chocolate mousse and mint sponge) for a more refreshing choice, or the beautiful deconstructed style A Walk in the Forest (with 84% Aceh chocolate stones, crème bavaroise, braised Amarena cherry, and pistachio moss.
VIEW is also home for a wide range of ‘Culinary Cocktails’, using house-made infusions, muddled fruits, infused syrups, earthy spices and herbs. Some of the must-try’s are the Kecombrang Sour (gin, torch ginger and lemon), Pandantini (martini with pandan infused flavors), Purple Gimlet (butterfly pea flower infused gin and lime juice), Echo Chic (lemongrass infused vodka, Cointreau, and lemon), Elderflower Daiquiri (rum, cranberry juice, and elderflower syrup), and VIEW Iced Tea (jasmine tea infused vodka with rum, gin and Cointreau).
The combination of extraordinary culinary journey, complemented with refreshing cocktails or wine collection, and enjoyed on the 22nd floor of Fairmont Jakarta looking over the city skyline through its floor-to-ceiling windows, VIEW Restaurant & Bar claims that ‘everything just tastes better up here…’
